Pet Nat eh? What does it even mean anymore? At the risk of evangelising, it's safe to say we care about how we make ours. Technically you can make a sparkling wine in any way you want and call it a pet nat, it's not accurate but the cops won't come knocking on your winery door.
For us, this is a wine that requires the least "winemaking" processing, while being the most time consuming. It captures and retains the most feeling and flavour from the vineyard. This means it has to have really high quality fruit. To be true to the name it needs to finish fermenting in the bottle and that's how the bubbles are made. For us, it can be disgorged if it makes it more enjoyable. It definitely can't have anything in it other than grape juice, just like all our wines.
It's the riskiest of our wines which makes it the most exciting to make. This Pet Nat is looking likely to be the last Pet Nat we make, at least for some time. So if we come back after a little hiatus and have changed our mind, don't go pulling this email out and quoting it back to us. Just drink some HUBBA HUBBA and let us know what you think, we are learning too.
