2024 BLOSSOM - Moscato Giallo - $18

100% whole bunch carbonic maceration for 3 long weeks before a very gentle slow basket press over 3 days. Everything about it's production was slow and gentle resulting in a uniquely enjoyable take on the grape. 
It's a little spicy with a mouth wetting natural acid. Salted Meyer lemon, earl grey, Sichuan and Pink Peppercorns. Just 50 Doz made

2024 BLONK - Sauvignon Blanc - $17
All tropical fruits with this easy summer white. Passionfruit and pineapple juice, a nice bite of acid. Predicting a beer garden and park esky hit of the summer season.

A funk fuelled Marsanne perfect for the freaks that love to drink white wine through winter. Savoury and super textural with hints of honey suckle and pickled apricots. 

2023 COUGH DROP - $17

Definitely our most adventurous wine to date. Extended skin contact with the Gruner has resulted in an extremely herbal and bitter flavour of coriander seeds and rainbow sour straps. The Shiraz rose has added a smoothness and a smack of ripe red fruits to balance the sharpness of the gruner. A wine to open your mind, the pinnacle of POOL? Enjoy with ice and orange peel? Take it all in.  

 

A Rose like you've never had, this oxidised, creamy, brown, electric, nutty wine has a big whack of Creaming Soda notes (the brown one not the pink shit) and a bitter Vermouth-esque finish. A favourite wine amongst the POOL boys in a while.
In our opinion this is the "finest" "natural" Shiraz you can get. No fancy techniques here, made with extreme respect at every stage. Top quality organic fruit handpicked, gently processed and watched with careful eyes over a generous élevage in mature barrels to produce a wine with great weight with a plenty of length and fine tannins. Hands-off/Eyes-on style.
